How cow drops work

Everything you need to know before you reserve a share.

What is a cow drop?

Instead of buying individual cuts at retail prices, you buy a share of one whole cow — a quarter, eighth, or custom split — alongside a few neighboring households. The animal is processed on a single butcher day, and every household gets a cut sheet with exactly the steaks, roasts, ground beef, and bones they want.

1
One cow
One locally raised animal, processed whole.
9 max
households
Federal rule caps each animal at 9 household buyers.
1 day
butcher day
One cut date, one cut sheet, one pickup.

How it works

1
Reserve your place. Claim a share of an upcoming drop before it fills (9 households max per animal).
2
Build your cut sheet. Pick steaks, roasts, ground, bones, organ meats — cut to your thickness and wrap.
3
Butcher day. The animal is processed at a USDA-inspected plant; every package carries the inspection mark and freeze-by date.
4
Pickup or delivery. Collect your packaged beef on the drop day, Wednesday or Saturday, in Shelbyville.

Why it beats the shelf

Because you're buying direct from the animal at butcher-day prices — no retail markup, no middlemen, no warehouse storage.

Grocery shelf
~$10.99/lb
Retail steaks & roasts, variable quality.
Runchero cow drop
~$8.80/lb
About 20% under the shelf, cut to your order.
  • ~20% under grocery shelf on every cut, every drop.
  • Whole-animal value — bones, organ meats, and stew cuts included, nothing wasted.
  • Cut to your order — thickness, wrap style, portion size, all your choice.
  • One farmer, one animal — you know exactly where your beef came from.
  • USDA-inspected — inspection mark, safe-handling statement, freeze-by date on every package.

The rules that make it fair

9 CFR 303.1(d)
A single animal may be sold to no more than 9 households, and no household may take more than half the carcass.
One butcher day
All households on an animal share the same processing date and cut sheet.
No resale
Beef bought on a drop is for your household, not for resale.
