Minimum that must go to households
2970 lb (three quarters)

The retail exemption does not allow one sale to be more than half a carcass, so the most any household may take is 1980 lb. At least three quarters of the cow has to go to households, which is 2970 lb. That is why the cow is split into 4 shares of 158 lb: every household takes one, and the whole cow is butchered once, on one day, to one cut sheet that everyone sees before their meat is wrapped.
